Creamy Pesto Shrimp Recipe

Good evening, and happy Friday! We made it through the weekend, and now it is time to enjoy a nice, delicious, meal to cap the night off.

 

  • 1 lb. pasta linguine pasta
  • 1/2 cup butter 
  • 2 cups almond milk 
  • 1/2 teaspoon black pepper
  • 1 cup grated parmesan cheese
  • 1/3 cup pesto
    • Pre-made 
    • Or if you want to be special... Grab a cup of parsley, a garlic clove, a pinch of salt, and a 1/2 cup of olive oil. Blend together or preferably use a food processor. 
  • 1 lb. of peeled, cooked shrimp.

 

  1. Bring a large pot of water to boil add a pinch of salt, bring down to . Add pasta, and cook for 8 to 10 minutes, or until al dente. Or a little bit longer if you like a softer noodle. Drain, using a collander. Let rest. 
  2. In a large skillet, bring to medium, and melt the butter. Stir in milk, and stir to thouroughly thicker.Season with pepper, and salt. 
  3. Stir in parmesan cheese, add in pesto, and stir around and let cook and thicken for 3-5 minutes. 
  4. Add shrimp to sauce and stir around let cook 2-3 minutes. 

You are ready to serve! Now and enjoy with a delicious white Bordeaux, or a New Zealand Sauvignon Blanc!
